Carrot Fritters (from East Hampton 1770 House)

5/6 carrots, grated

2 eggs

1/2 teaspoon salt

1 T sugar  (I use a bit more)

1/4 cup flour

4 TBLE sweet butter  (I use combination of butter and olive oil and still tastes good)

  1. Mix the grated carrots with eggs, salt, and sugar and blend in the flour to make a batter.
  2. Melt the butter in a large skillet and drop batter by tablespoons into the hot butter.
  3. Fry for a few minutes on each side (till they brown a bit).  Remove with a slotted spoon and drain on absorbent paper.  Makes about 18 fritters.
  4. NOTE:  You may substitute other grated vegetables but make sure they are well drained.  I recently made this with about 2/3 carrots– 1/3 parsnip.  It was delicious.  Goes well with applesauce.  Can be made ahead and heated in hot oven when ready to serve.
