5/6 carrots, grated
1/2 teaspoon salt
1 T sugar (I use a bit more)
1/4 cup flour
4 TBLE sweet butter (I use combination of butter and olive oil and still tastes good)
- Mix the grated carrots with eggs, salt, and sugar and blend in the flour to make a batter.
- Melt the butter in a large skillet and drop batter by tablespoons into the hot butter.
- Fry for a few minutes on each side (till they brown a bit). Remove with a slotted spoon and drain on absorbent paper. Makes about 18 fritters.
- NOTE: You may substitute other grated vegetables but make sure they are well drained. I recently made this with about 2/3 carrots– 1/3 parsnip. It was delicious. Goes well with applesauce. Can be made ahead and heated in hot oven when ready to serve.
